Radha is a member of the Green Table network and is firmly committed to sustainable environmental practices – composting, recycling, using eco-friendly, and fair trade products, and maximizing whatever we are given. The large majority of ingredients in our kitchen are organic. Here is a list of what we use:
Local Organics
- Fruit – apples, apricots, all berries, peaches, pears, plums, rhubarb, tomatoes
- Vegetables – arugula, asparagus, basil, bell peppers, beets, broccoli, cabbage, carrots, chard, collards, cucumbers, fennel, kale, leeks, mushrooms, nettle, pea shoots, red onions, radishes, romaine, shallots, snap peas, spinach, squash, sprouts, sunchokes, potatoes, zucchini
Organics from further afield:
- Fruit – avocados, fair trade bananas, lemons, oranges
- Vegetables – whatever BC produce is not available or affordable
- Dry goods – all beans, coconut, cornmeal, all flours, all grains, all nuts, all seeds
- Staples – apple cider vinegar, arrowroot, cacao nibs, cacao butter, fair trade chocolate chips, fair trade cocoa powder, coconut oil, fair trade coffee, flax oil, maple syrup, miso, mustard, oats, palm oil, raisins, rice & soy milks, sprouted-grain buns, sugar, safflower oil, wheat-free tamari, tahini, tempeh, tofu
